Milwaukee native and longtime barman Tim Doherty always wanted to open his own pub, but the late night hours were turning his hair gray, so he chose to open a breakfast joint instead. Harking back to his Midwest roots, with waffles smothered in sauteed fruit, melted cheese on most everything, and friendly down home service, Tim created Syrup – a contemporary take on the classic pancake house.

With a legion of former bartenders and cocktail servers at his side, Tim cultivated a bustling early morning place that has an easy afternoon feel. His award-winning corned beef hash, handcrafted syrups, and signature green chili stew earned the restaurant a loyal following in a very short time, ensuring Syrup a coveted place in Denver’s breakfast scene.

Our head chef, Lonnie Brock, oversees all three of our amazing Syrup kitchens. Serving up the most delicious and creative breakfast, lunch, and brunch menu items!

Unfortunately we do not take reservations. Please give the location a call the day of your visit, let them know the size of your party and they will be able to tell you if there is a wait and all possible times.
